Make your work lunches easy by preparing a few soft boiled eggs to take to work, along with a tub of hummus, a packet of cruskits and some cherry tomatoes for some freshness. This quick and easy combo provides a good source of protein and is a great vegetarian option.

Ingredients:
- 2 size 6 eggs, soft boiled
- 1 tsp mayonnaise
- 4 tsp smoked hummus (or hummus of choice)
- 2 Cruskits (or other crispbread of choice)
- Fresh herbs or microherbs of choice for topping (optional)
- 4 cherry tomatoes, diced (optional)
- Salt and pepper to taste
Method:
- Mash the eggs with the mayonnaise and season with salt and pepper
- Spread 2 tsp of hummus onto each cruskit and top with half of the egg mixture on each
- Sprinkle with fresh herbs and an extra crack of pepper, serve with diced cherry tomatoes on the side
