Looking for breakfast inspiration? Have you ever tried ricotta before? Compared to other cheeses, ricotta is relatively low in salt and fat and can be a good option as a spread for Cruskits. Mixed with a few other ingredients and topped with a few berries, it tastes a bit like a healthy cheese cake!

Ingredients:
- 2 Cruskits (or other crispbread of choice)
- 2 tbsp ricotta
- Juice and zest of 1/2 lime
- 1/2 tsp vanilla essence
- 1 tsp desiccated coconut
- 2 tbsp frozen raspberries, defrosted
Method:
- In a small bowl, mix the ricotta, lime juice and zest, vanilla essence and coconut until combined
- Spread 1 tbsp of the ricotta on each Cruskit and top with the raspberries
