With nearly 10g of protein per 100g, ricotta is a good protein rich spread for Cruskits that is lower in fat and salt than many other cheeses. Served with a milky coffee or glass of calci trim milk either 30 minutes before or after, you’ll be getting close to your 20g of protein with this start to your day.

Ingredients:
- 2 Cruskits (or other crispbread of choice)
- 2 tbsp ricotta
- 2 tsp lemon juice
- 1 tsp lemon zest
- 1/2 tsp vanilla essence
- 1/4 tsp ground cinnamon
- 1 tsp sliced almonds, toasted
- 2 tbsp frozen blueberries, defrosted
Method:
- In a small bowl, mix the ricotta, lemon juice, lemon zest, vanilla essence and cinnamon until combined
- Spread 1 tbsp of the ricotta on each Cruskit and top with the sliced almonds and blueberries
