Raspberry And Peanut Butter Bircher Muesli

A hearty, filling, delicious breakfast dish! This is an excellent choice to set yourself up for the day.

  • Portions: 1 Bowl

Ingredients:

  • 1/4 cup rolled oats
  • 1 teaspoon chia seeds
  • 1 teaspoon currants
  • 1/4 teaspoon cinnamon + extra for garnishing
  • 1/4 cup fresh or frozen raspberries
  • 1/2 cup milk (or milk alternative)
  • 2 dessert spoons plain yoghurt
  • 1 teaspoon smooth peanut butter
  • Extra raspberries for garnishing

Method:

  1. Add the rolled oats, chia seeds, currants, and cinnamon into a small bowl or ramekin
  2. Add the raspberries to the oat mixture and pour the milk on top. Stir to combine until all of the oats are covered in milk. Cover and chill in the fridge overnight
  3. When ready to serve, add the yoghurt to the oats and mix to combine. Add an extra dash of milk if needed to loosen the oats
  4. Top with a drizzle of peanut butter, sprinkle or cinnamon and the remaining raspberries
