This is a lovely combo that is soft and easy to eat. It is also high in protein and is a quick and easy option to prepare for any meal of the day.

- Portions: 1 Cruskit
Ingredients:
- 1 Cruskit (or other crispbread of choice)
- 1 tbsp lite cream cheese (I used Philadelphia)
- 2 tsp lemon juice
- 50g hot smoked salmon, broken into chunks
- 1 slice of gherkin OR 1-2 cornichons, diced
- Cracked black pepper to taste
Method:
- In a small bowl, mix the cream cheese and lemon juice until combined
- Spread the cream cheese on the Cruskit and top with the salmon and gherkin
- Season with salt and pepper and serve
