Fresh and summery, this salad is a great option to take along to a BBQ at a friend’s place or as a side to your protein on a hot summer night. Its quick and easy to prepare and the cherry boccocini provide an added protein boost.

Ingredients:
- 500g mixed variety tomatoes (I used a mix of different coloured cherry and heritage tomatoes)
- 125g tub cherry bocconcini
- 10-12 fresh basil leaves
- 1 tbsp extra virgin olive oil
- salt and pepper to taste
Method:
- Slice the heritage tomatoes into 0.5cm slices, arrange on the bottom of your serving dish of choice
- Slice the cherry tomatoes into 2 or 3 and dot the pieces in any gaps you can see
- Drain the bocconcini and place the pieces on top of the tomatoes
- Drizzle with olive oil, place the basil leaves on top and season with salt and pepper before serving
