Heritage Tomato Caprese Salad

Fresh and summery, this salad is a great option to take along to a BBQ at a friend’s place or as a side to your protein on a hot summer night. Its quick and easy to prepare and the cherry boccocini provide an added protein boost.

  • Prep: 10 Minutes
  • Portions: 1 Medium Dish

Ingredients:

  • 500g mixed variety tomatoes (I used a mix of different coloured cherry and heritage tomatoes)
  • 125g tub cherry bocconcini
  • 10-12 fresh basil leaves
  • 1 tbsp extra virgin olive oil
  • salt and pepper to taste

Method:

  1. Slice the heritage tomatoes into 0.5cm slices, arrange on the bottom of your serving dish of choice
  2. Slice the cherry tomatoes into 2 or 3 and dot the pieces in any gaps you can see
  3. Drain the bocconcini and place the pieces on top of the tomatoes
  4. Drizzle with olive oil, place the basil leaves on top and season with salt and pepper before serving
