A simple nutritious meal which is loaded with protein and healthy fats to keep you feeling fuller for longer. The importance of fibre is not forgotten with a generous serve of spinach alongside. If you are in the earlier stages post op, you may like to half the recipe and take a small amount of each component to get all the flavours on a smaller scale.

Ingredients:
- 2 eggs
- 1 tsp olive oil
- 1/4 red onion, diced
- 2 big handfuls baby spinach leaves
- 100g smoked salmon slices
Method:
- Fill a small saucepan halfway with water and bring to a simmer. Once simmering, gently lower the eggs into the pan and cook for 7 minutes (for soft boiled)
- While the eggs are cooking, heat the oil in a small frying pan and cook over a medium heat until softened. Add in the spinach and cook until just wilted. Set aside
- Once the eggs are cooked, run the pan under cold water to cool then peel the eggs and slice in half
- To assemble, arranged the smoked salmon, spinach and eggs on a plate and serve with a crack of ground black pepper to taste
