This chia jam is great dolloped on top of some plain yoghurt, mixed into porridge instead of sugar or honey, or added to Weetbix with plenty of milk. The chia seeds provide a good source of fibre to promote bowel regularity and add a bit of texture and tartness.
- Prep: 5 Minutes
- Cook: 30 Minutes
- Portions: 1 Cup
Ingredients:
- 250g mixed berries
- 1/3 cup water
- 1 tsp vanilla essence
- 2 tbsp chia seeds
Method:
- Add the berries, water and essence to a small saucepan and cook for 10 minutes over a gentle heat.
- Allow to cool for 10 minutes, then add the chia seeds, stirring well to combine.
- Allow to sit for a further 5 minutes, stir again, then transfer to a bowl or container.
- Cover and keep refrigerated, will last up to one week.
