For delicious breakfasts all week, take the time to make a bowl of caramelised onions once so that you have tasty omelette ingredients for the rest of your morning starts. The omelette itself is quick and easy to prepare and with strong flavours like onion, sundried tomatoes and feta, it will hit all the savoury buttons. This recipe is suitable from the soft stage onwards and can be doubled, tripled or even quadrupled if you’ve got other family members to feed.

Ingredients:
- 2 brown onions, halved and sliced thinly
- 2 tsp olive oil
- 1/4 cup balsamic vinegar
- 1 tsp brown sugar
- 2 eggs
- Salt and pepper to taste
- 1 tsp olive oil
- 2 tbsp caramelised onions
- 2 tbsp sliced sundried tomatoes
- 30g feta cheese
- Fresh parsley for garnishing (optional)
Method:
- To make the caramelised onions, place the sliced onions and olive oil in a small saucepan and cook over a low-medium heat until softened (don't be tempted to increase the temperature as you want the onions to be soft and sweet, not burnt!)
- Once the onions have softened, add the vinegar and sugar and reduce to a low heat
- Cook for a further 20 minutes or until the vinegar has completely reduced
- Transfer the onions to a small bowl and set aside
- To make the omelette, whisk the two eggs and a crack of salt and pepper in a small bowl with a fork until combined
- Heat the olive oil in a small frying pan and when hot, add the egg mix
- When the omelette is nearly cooked, evenly spread the caramelised onions, tomatoes and feta on top
- Cook for a further 30 seconds or so, or until the egg mix is cooked through
- Turn off the heat, garnish with parsley and enjoy!
